Laccha semai is wheat dough worked with fat, pulled into fine layered strands and fried into crisp, flaky nests. Bogura is the biggest maker in the country: hundreds of small factories in town neighbourhoods such as Bejora, Chelopara and Naruli, and along the Karatoya, run day and night before Eid. At home it is simmered briefly in sweetened milk, or just warmed with sugar and ghee. Ghee-fried batches are the premium kind.
Good to know
The weeks before Eid are when production peaks and the choice is widest.
