Boiled potatoes are broken by hand and cooked into beef that has been simmered with onion, ginger-garlic and whole spices, until the two blend into a thick, spoonable curry. A final tempering of panch phoron, green chilli and fried garlic gives it its smell. Elsewhere ghati is made with fish or egg, but in Bogura it usually means beef. It is the dish of milad and kulkhani gatherings, waz mahfil feasts and picnics, and a classic way to use Eid-ul-Adha meat.
