Akhni is Sylhet's answer to pulao and biryani: rice cooked together with beef or chicken, whole spices and often potatoes, until the grains are coated and flavourful but not heavy. It is made for Eid, weddings and especially for iftar in Ramadan, when big pots appear in homes and shops across the city. It has a lighter touch than Dhaka's biryanis.
