Shatkora Beef
সাতকরা গরুর মাংস
Slow-cooked beef with chunks of shatkora, a bitter-aromatic citrus found almost only in Sylhet.
Shatkora is a thick-skinned wild citrus grown in the Sylhet region. Its rind is cut into pieces and cooked with beef or mutton, giving the curry a sharp, fragrant, slightly bitter note unlike anything else in Bangladeshi cooking. It is a pride of Sylheti homes and restaurants, and expatriate Sylhetis carry the fruit to Britain and beyond.
