When the Chalan Beel water drops at the start of winter, small fish such as puti, taki and shol are cleaned, salted lightly and laid out on bamboo racks to dry around the Mohishluti fish depot in Tarash upazila. Unlike sea shutki, this freshwater kind is milder and is cooked as a bhuna or a mashed bhorta with chilli and garlic. A good share goes to India, but the depot and nearby drying yards sell to anyone. Catches vary a lot from year to year, so stock and prices change with the season.
Good to know
Puti shutki is the cheapest and most common; shol and boal cost much more.
