Sugarcane is everywhere in Joypurhat, and alongside the mill, small village presses crush cane for juice and jaggery. Fresh juice is sold from roadside stalls, sometimes with lime and ginger. In winter some farmers boil the juice in shallow pans to make golden akher gur, which is used in sweets, pitha and tea. It tastes milder than date palm molasses but has its own fresh sweetness.
