Chui is the stem of a climbing pepper plant grown across greater Khulna and Jashore. Cut into pieces and slow-cooked with mutton or beef, it gives a sharp, aromatic heat unlike chilli, and the softened chui itself is chewed for its flavour. Roadside hotels at Chuknagar on the Khulna–Satkhira road built a reputation on this dish. It is eaten with plain rice, often for lunch.
