Bamboo Chicken

Spiced chicken sealed in a green bamboo tube and roasted over coals until smoky and tender.
Chicken pieces are marinated with chilli, garlic, ginger and herbs, packed into a length of green bamboo, sealed with leaves and set over the fire. The bamboo steams the meat in its own juices and gives it a faint grassy, smoky flavour. Once a hill-village cooking method, it is now a favourite dinner at Sajek and Rangamati.
